3 delicious, vegan snack recipes for kids

When it comes to snack-time, it is important to think out of the box. Getting kids to eat healthy can be a tricky affair, but if you pick the right recipes, making your own treats can save you both time and money. Vegan snacks are a great way to increase your child’s intake of fruits and vegetables. It can also help kids who are lactose intolerant.

Here are some easy healthy snack recipes with a vegan twist, for a nutrition boost for your little ones:

Chocolate Banana Muffins

Ingredients

3 vegan eggs
¾ cup sugar
½ cup coconut oil, liquified
2 tablespoons vegan sour cream
2 ripe bananas, mashed
1½ cups chickpea flour
¼ cup cocoa powder
1 teaspoon baking powder

Instructions

Preheat the oven to 175°C. Whisk the vegan eggs and sugar until fluffy, before adding the coconut oil, sour cream and mashed bananas. Mix vigorously until they are combined well. Sift the flour, cocoa powder and baking powder into the batter and stir until completely mixed. Grease the muffin cups and fill it with the batter. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

Baked corn fritters

Ingredients

2 cups corn kernels
10 tablespoon chickpea flour or besan
1/2 cup corn flour
1 teaspoon cumin powder
1 teaspoon cayenne pepper
1/2 teaspoon turmeric
2 tablespoon coriander leaves, finely chopped
Salt to taste

Instructions

Preheat the oven to 175°C. Mix all the ingredients with water to make a thick, smooth batter. Make sure that there are no lumps of chickpea flour in it. Use a parchment paper on a baking dish and lightly grease it with cooking spray. Drop dollops of batter on the sheet and bake in the preheated oven for 30 minutes. Flip onto the other side, halfway through the process. Baked corn fritters are ready!

Breakfast banana pops

Ingredients

Bananas (Or any other fruit of your choice)
Low-fat yoghurt
Granola, crushed cookies or powdered crackers
Chocolate chips and raisins (Or any other topping)
Popsicle sticks

Instructions

Pour the granola onto a plate. Peel the bananas, cut in half and insert popsicle sticks into them. Dip the bananas into yogurt before rolling them on the granola. Add your favorite toppings, place the sticks on a parchment paper or greased tray and freeze.
